Cider braised chicken with pearl barley & carrots

Serves 4
Ingredients
4 pieces of chicken, can be any cut you like
1 tbsp olive oil
4 garlic gloves chopped
200g peal barley
100ml dry cider
300ml chicken stock
250g carrots chopped
25g butter
250g leeks sliced
250g peas
Step 1: Season your chicken with salt and pepper. Heat the olive oil in a wide shallow pan and brown off your chicken for 5 minutes before removing it onto a side plate. Leaving the fat in the pan.
Step 2: fry the garlic and stor briefly, then stir in the pearl barley, cider and chicken stock and bring to the boil. Return your chicken skin side up, cover with a lid and leave to simmer for 20 minutes. Add the carrots and leeks and cook for a further 20 minutes.
Step 3: Uncover the pan and add the peas and a splash of cider, taste and add more if needed. Simmer for 5 minutes until the liquid has reduced nicely.
