A very simple recipe with simple flavours but this saute takes the humble green bean to an extra delicous level.

Serves 3

Ingredients

190g french green beans

1 onion

1 garlic clove

1 pinch of salt

1/2 tbsp of butter

1/2 tbsp olive oil

Step 1: Very finely chop your onion, chop it up then chop it some more. The smaller the better and grate your garlic.

Step 2: Bring a pan of water to the boil, adding a pinch of salt. Add your beans to cook for 1-2 minutes if you like a bit of bite, 2-4 minutes if you like them a bit softer.

Step 3: Once you have drained your beans put them in a bowl of ice water and set aside.

Step 4: Warm a medium frying pan or skillet to a medium heat. Add your butter and oil. Once sizzling add your finely chopped onion and gently fry for a couple of minutes.

Step 5: Add your garlic and cook for another minute before adding your drained beans. cook for another 1-2 minutes, moving them around the pan regularly, then serve.
